Vegetarian Chili

This summertime chili is hearty but not heavy and a perfect go-to for those summer nights that pose that all-too-familiar question: “What’s for dinner?”

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 can of red beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 1 can (28 oz) of diced tomatoes
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tbsp dried oregano
  • Cilantro, chiffonade
  • 1/2 cup sour cream
  • Salt and pepper to taste

 

Directions

  1. Heat a large skillet with olive oil over medium heat. When hot, add the onion and cook until mostly translucent. Add the cumin and oregano, then allow to bloom before adding the garlic and cook until fragrant.
  2. Mix in both cans of beans with some salt and pepper before adding the can of tomatoes and chili powder. Allow all the ingredients a chance to simmer together until the tomatoes begin to break down a bit. This could take anywhere from 5 to 20 minutes.
  3. Taste and adjust seasonings as needed, garnish with sour cream and cilantro.
