Ingredients

  • 1/2 cup sesame oil
  • 1/4 cup miso paste
  • 2 1/2 tbsp. minced garlic
  • 1 tsp. red pepper flakes
  • 2 cups brown rice
  • 1 1/3 cups brussels sprouts, cooked
  • 2 cups green beans, cooked
  • 2 apples
  • 1 cup turkey, cooked

Directions

  1. Make the dressing: Combine sesame oil, miso paste, minced garlic, and red pepper flakes in a small bowl. Stir well with a whisk or spoon.
  2. Cut the cooked brussels sprouts into four pieces. Cut the cooked green beans into about 1-inch chunks. Chop the apple into a small dice.
  3. Dice the turkey into 1/2-inch pieces and set aside.
  4. Heat sauté pan over medium-low heat and add turkey, green beans, brussels sprouts, and dressing until everything is coated and warmed through.
  5. Portion 1/2 cup rice into each bowl, then top with the turkey and vegetable mixture. Distribute the diced apple in an even layer over the turkey and vegetables.
