In a large pot, heat oil and sauté onion and bell pepper until soft.
Add sweet potato or squash, garlic, chili powder, and cumin and sauté 2 more minutes.
Add remaining ingredients and bring to a boil then reduce heat and simmer for 30 minutes. Stir occasionally to prevent sticking.
Slow Cooker
Combine all ingredients except oil and cook on LOW for 7-8 hours or HIGH for 4 hours until chili has thickened and vegetables are cooked.
