Secret Ingredient Veggie Chili

Ingredients

  • 1 tbsp. vegetable oil
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 cups squash or sweet potato, chopped
  • 4 cloves garlic, chopped
  • 2 tsp. chili powder
  • 2 tsp. cumin
  • 2 tsp. unsweetened cocoa powder
  • 28 oz. canned tomatoes
  • 60 oz. canned beans
  • 1 cup water
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

Stovetop

  1. In a large pot, heat oil and sauté onion and bell pepper until soft.
  2. Add sweet potato or squash, garlic, chili powder, and cumin and sauté 2 more minutes.
  3. Add remaining ingredients and bring to a boil then reduce heat and simmer for 30 minutes. Stir occasionally to prevent sticking.

Slow Cooker

  1. Combine all ingredients except oil and cook on LOW for 7-8 hours or HIGH for 4 hours until chili has thickened and vegetables are cooked.
