Carrot-Jicama Slaw

Ingredients

  • 1/2 lb. jicama
  • 1 small cucumber
  • 1 carrot
  • 2 tbsp. rice vinegar
  • 1 tbsp. lime juice
  • 1/4 tsp. salt

Directions

  1. Cut jicama, cucumber, and carrot into matchsticks about an inch long.
  2. Combine rice vinegar, lime juice, and salt in a bowl.
  3. Toss the vegetables in the dressing mixture and refrigerate before serving.
