Herb Popcorn

This homemade herb-topped popcorn is a delicious change of pace from the usual microwave bag! Making your own popcorn is cheaper, better for you, and so much tastier! Follow this recipe for a B12-boost from the nutritional yeast or use your favorite spice blend to personalize the flavor.
Cooking Tip

Make sure to use a high-heat oil. You don’t want the oil to start smoking. Try out different seasonings! Use your favorite toppings and spices to make this popcorn your own!

Ingredients

Herb Topping

  • 2 tsp. nutritional yeast
  • 1 tsp. dried basil
  • 1 tsp. dried dill or thyme
  • 1 tsp. garlic powder
  • 1/8 tsp. salt

Popcorn

  • 1.5 tbsp. high-heat oil (like grapeseed or refined coconut oil)
  • 1/2 cup dried corn kernels
  • 1.5 tbsp. olive oil
  • 1/8 tsp salt (optional)

Directions

  1. Make the herb topping. Mix together nutritional yeast, dried herbs, garlic powder, and salt in a small bowl.
  2. Make the popcorn. In a large pot, heat the oil over medium heat. Add a couple kernels of corn, put on the lid, and shake it around occasionally. When one pops, the pan is ready. This may take up to a minute and a half.
  3. When the pan is hot, add the rest of the kernels and cover with a lid. Shake the pan every few seconds to prevent burning. If they don’t start popping in the first 30 seconds, turn the heat up a bit. Once you hear more than a couple seconds between pops, turn off the heat.
  4. Pour the popcorn into a large bowl. Pour olive oil over the top and stir to cover. Sprinkle in herb topping and toss. Add salt to taste. Store for a few days in an airtight container.
