Ingredients

  • 1/4 cup vegetable oil
  • 1/2 onion, chopped
  • 1 tsp. garlic, minced
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 2 cups pinto beans
  • 1 cup bean liquid
  • 1/4 cup lime juice

Directions

  1. Heat vegetable oil and onion over medium-low heat in a sauté pan.
  2. Add garlic, chili powder, and cumin. Stir to combine.
  3. Pour in drained pinto beans and reserved bean liquid. Cover and cook for 5 minutes.
  4. Reduce heat to low and remove lid. Use a potato masher to mash the beans.
  5. Cook uncovered, stirring frequently for 3 minutes. If beans are dry, add water 1 tsp. at a time.
  6. Remove from heat and add lime juice. Stir to combine.
