Ingredients

  • 1 lb Roma tomatoes, diced
  • 1 medium white onion, small diced
  • 3/4 cup cilantro, chopped
  • 1 lime zested and juiced
  • salt to taste (about a teaspoon)
  • 2 jalapenos, seeds removed and finely diced (optional)

Directions

  1. Into a medium sized bowl dice your tomatoes, onion, jalapenos, and cilantro then zest and juice your lime into the mixture before finally adding your salt. Mix well.
  2. Enjoy immediately or let the flavors marinate overnight.
