Pasta…The Easy Way!

This pasta works great on its own but can easily be prepared with Italian sausage, ground turkey, pressed tofu, and/or a good loaf of garlic bread!

Ingredients

  • 2 tbsp olive oil
  • 1/2 onion, sliced thin
  • 2 cups cherry tomatoes, halved if desired
  • 4 garlic cloves, small chopped
  • 1 cup green or black olives, drained, rinsed, and halved
  • 1/2 lb linguine
  • 2 cups water
  • 1 cup white wine
  • 1/4 cup parsley, chopped finely
  • 1/3 cup fresh basil, sliced very thin
  • 1/2 cup parmesan, grated
  • Salt and pepper to taste

Directions

  1. In a large, high-walled saute pan, heat up olive oil over medium heat and cook the onion until softened and slightly browned before adding the garlic and cooking until fragrant. You can add a splash of water (1-2 tbsp) to prevent the onion or garlic from sticking to the bottom of the pan before adding the tomatoes, olives, and salt/pepper. Stir to combine.
  2. Once the tomatoes begin to soften, add the linguine, water, and wine, then increase the heat to high to boil the liquid. Once the liquid boils, reduce the heat to a simmer and stir occasionally for about 7 to 8 minutes or until the pasta is al dente (cooked but still chewy, not a paste).
  3. Remove the pan from heat and stir in the basil, parsley, and parmesan. Taste, then add salt and pepper if necessary.
