North Africa Chickpea Soup

With some incredible traditional spices from North Africa, this delicious and hearty soup is one of the best ways to utilize that can of chickpeas that keeps staring at you when you open your cupboard!

This soup goes great with a homemade crouton garnish as well if you have some extra bread laying around that you want to use up!

Ingredients

  • 2 tbsp olive oil
  • 1 carrot, fine diced
  • 1/4 onion, fine diced
  • 1 tomato, cored and diced
  • 1 red bell pepper, seeded and diced
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1/2 tsp cayenne
  • 2 cans chickpeas, drained and rinsed
  • 5 small zucchini, chopped
  • 5 cups chicken broth
  • salt and pepper to taste

Directions

  1. In a large saucepan or dutch oven heat the oil over medium heat, once it is hot add the carrot and onion then saute until gently softened. Add the tomato, bell pepper, and seasonings (cumin, turmeric, cayenne) sauteing until fragrant. Salt to taste.
  2. Add the chickpeas, zucchini, and broth. Increase the heat to medium-high and get a slight boil going before reducing the heat and simmering the soup until the zucchini is tender, about 15 minutes or so. Season with some salt and pepper until it meets your desired flavor profile, remove from heat and drizzle a little extra olive oil in each bowl as a garnish.
