Mediterranean 3-Bean Salad

This perfect summer bean salad is a hearty mix of beans, veggies, and feta all brought together with a tangy vinaigrette!

Ingredients

  • 1 can chickpeas (drained then rinsed)
  • 1 can canellini beans (drained then rinsed)
  • 1 can kidney beans (drained then rinsed)
  • 8 cherry tomatoes, sliced in half
  • 1 red bell pepper, fine diced
  • 1 yellow bell pepper, fine diced
  • 1-2 cucumbers, de-seeded and chopped
  • 1/2 red onion, fine diced
  • 1/2 cup olives, rough chopped
  • 1/3 cup fresh parsley, rough chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red wine vinegar
  • 2 tsp honey
  • 2 tsp oregano
  • 1 tbsp minced garlic
  • 1/4 cup olive oil
  • salt and pepper to taste

Directions

  1. In a small mixing bowl combine vinegar, honey, oregano, garlic, salt and pepper then slowly whisk in olive oil until combined.
  2. In a large mixing bowl add all of the beans, peppers, onion, tomatoes, olives, parsley and feta then pour the dressing from the mall mixing bowl and toss everything gently until combined.
  3. Chill for 20-30 minutes then serve.
