Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 3 tbsp tomato paste
  • 3/4 cup sundried tomatoes, rough chop
  • 1 can cannellini beans, drained and rinsed
  • 1 & 1/2 cup orzo
  • 3 cups vegetable broth
  • 1 & 1/2 tsp dried oregano
  • salt and pepper to taste
  • 1/2 cup half and half
  • 1/2 cup parmesan, grated
  • 5 oz fresh spinach, chopped
  • 1/2 lemon zested and juiced

Directions

  1. In a large skillet heat the olive oil up on medium heat and once shimmering add the garlic and red pepper flakes, if using, and cook for about 30-60 seconds or until fragrant. Mix in the tomato paste and sauté for another minute then add the sundried tomatoes, beans, and orzo. Cook for a few minutes, coating the pasta.
  2. Pour in the vegetable broth, dried oregano, salt and pepper. Simmer uncovered for 7-8 minutes while stirring often so the orzo doesn’t stick to the bottom of your pan.
  3. Once the orzo is mostly tender, lower the heat and then stir in the half and half, parmesan cheese, and spinach. Cook a couple minutes to allow the spinach to wilt a bit then remove from heat. Add the lemon zest and juice, then taste before adding salt and pepper as needed.
