Cooking Tip
Use any type of nut butter. Try adding a mashed banana!
Prepare lentils. Combine dry lentils with 3/4 cup water. Bring to a boil, cover, reduce heat, and simmer for 5-7 minutes until tender. Drain excess liquid and let cool.
Combine all ingredients except coconut in a mixing bowl. Mix until well blended and the mixture reaches a moldable consistency.
Roll into 8 bite-sized balls. Roll in coconut if using. Place on a parchment lined plate and chill in refrigerator at least 15 minutes before serving.
