Layered California Roll

Ingredients

  • 1 cup sushi rice (Calrose is great)
  • 1 cup water
  • 1/2 tsp salt
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 2 medium sized ripe avocados, peeled and cubed or sliced
  • 1 cup cucumber, peeled, seeded, and chopped
  • 1-2 carrots, peeled and julienned
  • 2 nori sheets

Directions

  1. In a bowl, rinse your rice three times or until you see the water running clear and free from any debris. In a medium saucepan add the rinsed rice, water, and salt and bring to a boil. Reduce heat to a simmer, cover, and let sit undisturbed for 15-20 minutes or until rice is tender. Remove from heat and let sit for 10 minutes.
  2. In a small bowl combine vinegar and sugar together, mixing until the sugar is dissolved and then mix into rice.
  3. In your jar or serving bowl add about 1/3 cup rice, layer with a few avocado cubes or slices, cucumber, carrots., and nori. Top this with rice and then add another layer of veggies on top of the rice.
  4. If not eating right away, you can cover and refrigerate until serving.
