Herby Sugar Glazed Veggies

Celebrate the warm season with a delicate, tasty vegetable side dish known in France as a Vegetable Jardiniere! Highly customizable and a new favorite of ours, this recipe will make it very easy to get anyone to eat their vegetables.

Ingredients

  • 8 small carrots, peeled and cut in half lengthwise
  • 2 garlic cloves, minced
  • 2.5 cups green beans, fresh or canned
  • 2 cups peas
  • 2 shallots, diced
  • 1/4 cup butter
  • 2 tbsp sugar
  • 10 sprigs of parsley, rough chopped
  • 2 tbsp dried tarragon
  • salt and pepper to taste

Directions

  1. Prepare an ice bath in a medium sized bowl. Place the carrots in a large pot of boiling water and simmer for about 5 minutes, if you are using fresh green beans or peas you can add these to the pot as well. Using a slotted spoon, transfer the veggies to the ice bath to stop the cooking by cooling completely.
  2. In a large skillet or frying pan melt the butter over medium heat and then add the shallots and sweat them for a couple minutes. Add the garlic and cook for another minute before adding carrots, green beans, peas, and sugar. Remove from heat and mix well before adding tarragon and parsley.
  3. Taste and add salt and pepper as needed.
