Fresh Winter Slaw

Winter slaw is full of seasonal flavors and provides a filling balance of fruits and vegetables. The crisp apples and crunchy cabbage combine with chewy dried cranberries in a delicious and healthy dish.

Ingredients

  • 1 small head of cabbage
  • 1 large apple, chopped
  • 4 carrots, shredded
  • 1/2 small red onion, diced
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pumpkin seeds
  • 1/2 cup freshly grated parmesan
  • 3 tbsp. lemon juice
  • 2 tsp. apple cider vinegar
  • 1 tbsp. honey
  • 2 tsp. Dijon mustard
  • 2 tbsp. olive oil

Directions

  1. In a small bowl, combine lemon juice, vinegar, honey, mustard, and olive oil.
  2. Combine shredded cabbage, apples, carrots, and onions in a larger bowl. Pour dressing over and mix well.
  3. Top with cranberries, seeds, and parmesan.
  4. Serve immediately or store in refrigerator.
