Easy ‘n’ Cheesy Rice and Beans

Ingredients

  • 1 tbsp oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 cup rice
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp granulated garlic
  • 2 cups vegetable broth
  • 2 cans black beans, drained and rinsed
  • 1 cup shredded cheese of any kind
  • 1 tbsp cilantro, chiffonade
  • 1 tbsp sour cream or crema
  • 1/2 avocado, sliced
  • salt and pepper to taste

 

Directions

  1. In a medium sauté pan, heat oil over medium heat, then add diced onion and bell pepper, cooking for a few minutes until softened. Stir in the cumin, chili powder, oregano, and garlic and allow the spices to bloom a little. Once fragrant, add the rice and broth, then stir to blend all of the flavors together and bring the liquid up to a simmer, reduce the heat, and cover tightly.
  2. After 10 to 15 minutes, or once the rice is tender, add the beans and cheese and gently warm them until the beans are warm and cheese is melty. Taste and salt or pepper accordingly.
  3. Remove the pan from the heat and top with cilantro, sour cream and avocado to serve.
