Danieldorf Salad

This is a reimagining of the classic Waldorf salad, where we don’t shy away from fruit or veggie diversity!

You can use as many or as few of these ingredients as you would like, this is a good recipe to clean out the fruit that has been hanging around in your fridge for a little while.

Ingredients

  • 1 granny smith apple, 1/2″ cubes
  • 1 sweet red apple (honey crisp, envy, etc.), 1/2″ cubes
  • 1 cup red or green grapes, cut in half
  • 3 celery ribs, cubed
  • 1 small carrot, cut in small circles
  • 1/2 cup pecans (or any nut you have on hand), rough chop
  • 1/4 cup dried fruit (raisins, craisins, etc.)
  • 1/2 cup strawberries, quartered and de-stemmed
  • 1/4 cup raspberries
  • 1/2 cup lemon juice
  • 1/4 cup mayonnaise
  • 2 tsp orange juice
  • 1 tsp honey (maple syrup or agave works too)
  • salt and pepper to taste

Directions

  1. Fill a medium bowl with lemon juice and then chop both the apples into the lemon juice, stir to coat in juice and set aside while you prepare everything else, stirring occasionally.
  2. In another small bowl whisk together mayonnaise, orange juice, honey, then taste and add salt and pepper as needed to create a dressing.
  3. Chop the celery, carrot, pecans, and strawberries then add them into the dressing. Toss in the dried fruit and raspberries, drain the apples and toss them in as well before tossing everything together gently to coat evenly in dressing.
  4. Serve immediately or chill for about 30 minutes for a more refreshing bite.
