Breakfast Cookies

Start your morning off right with these vegan cookies! This quick recipe makes breakfast a lot easier. Combine staple breakfast ingredients like banana, peanut butter, and oats to make delicious and nutritious cookies. You can even make them ahead of time and freeze for later to get every day started on a sweet note!
Cooking Tip

Use any other type of nut or seed butter in place of peanut butter. Use honey in place of maple syrup. The optional ground flaxseed is high in fiber and omega-3s.

Ingredients

  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup peanut butter
  • 1/4 cup pure maple syrup
  • 1/3 cup applesauce
  • 1/2 cup mashed banana
  • 1/2 cup walnuts
  • 1/2 cup pepitas
  • 1/2 cup golden raisins
  • 2 cups quick oats
  • optional: 1/4 cup ground flaxseed

Directions

  1. Preheat oven to 325 °F. Line two large baking sheets with parchment paper and set aside.
  2. Combine all ingredients except oats in a large bowl. Mix with a spatula until well combined. Once mixed, add oats and mix again until well combined. The dough will be thick and heavy.
  3. Using a 1/4 measuring cup, scoop onto prepared sheets. Use the back of a spoon to slightly flatten into cookie shape. The cookies will not spread in the oven.
  4. Bake 16-19 minutes or until the edges are lightly browned. Cool on baking sheet for 10 minutes, then move to a wire rack to cool completely.
