Ingredients

  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup corn
  • 1/4 of an onion, diced
  • 1/3 cup canned tomatoes
  • 1/3 of an avocado, diced
  • 1/2 tbsp. diced jalapenos
  • 1/2 of a lime, juiced
  • 1 tbsp. olive oil
  • 1/4 tsp. chili powder
  • Salt and pepper to taste

Directions

  1. Mix black beans, corn, tomatoes, jalapenos, onion, and bell pepper in a bowl.
  2. Add lime juice, oil, salt and pepper. Toss gently to combine.
  3. Add avocado just before eating.
