Use a mix of tart and sweet apples to get a more complex compote with a variety of flavors. You can also mix in some cinnamon, ginger, or nutmeg for a warming sensation!
Peel, core, and chop the apples into bite-sized pieces and place into a medium sized saucepan with lemon juice, water, and both sugars. Stirring to coat the apples.
Put the saucepan over medium heat and cook for 15-20 minutes, stirring occasionally to keep the sugars from caramelizing and keeping the apples coated. Add more water if the compote begins to dry out.
Taste and add more lemon juice if needed, once the apples are softened you can remove the pan from heat and allow to cool a bit before serving or transferring to a jar for storage.
