Feed your family, friends, and self quickly with this easy microwave chicken enchilada recipe. Coming together in just about 15 minutes, this dish is a perfect meal for a fast and filling weeknight dinner.
Cooking Tip
Adjust amounts of ingredients based on preference. Cut in half to make less if not cooking for as many people. Top with cilantro, more cheese, more sauce, sour cream, or any other topping you like.
In a bowl, combine 1/2 cup enchilada sauce, chicken, and cheese.
Grease microwavable baking dish. Add enchilada sauce to the bottom of the dish.
Fill 1 tortilla at a time with heaping 1/4 cup of chicken mixture. Roll to seal and place seam down in the prepared dish.
Pour remaining sauce over top.
Microwave 5-10 minutes, until warmed through. Garnish with toppings of choice.
