Ingredients

  • 2 medium Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 tbsp. olive or vegetable oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne (optional)

Directions

  1. Rinse the potatoes under cold water. Place in a microwave safe bowl. Cover with cold water.
  2. Microwave on high for 4-6 minutes, stirring halfway through or until potatoes are easily pierced with a fork.
  3. Drain and add oil and spices, then mix gently.
