2 medium Russet potatoes, peeled and cut into 1/2 inch cubes
1 tbsp. olive or vegetable oil
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne (optional)
Directions
Rinse the potatoes under cold water. Place in a microwave safe bowl. Cover with cold water.
Microwave on high for 4-6 minutes, stirring halfway through or until potatoes are easily pierced with a fork.
Drain and add oil and spices, then mix gently.
