Homemade Greek Pita

Ingredients

  • 500g bread flour
  • 360g lukewarm water
  • 3 tsp dry instant yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 cup olive oil
  • aluminum foil
  • water for steaming

Directions

  1. In a large bowl, combine the yeast, sugar, and water and set aside for 5-10 minutes until the yeast becomes frothy. Add the flour and salt then mix the ingredients by hand, kneading for 6-10 minutes. The dough should end up elastic and a little sticky.
  2. Coat the dough with olive oil and place back in the bowl, cover with plastic wrap and a towel. Let it sit for 20 minutes in a warm spot until it doubles in size.
  3. Take the dough out of the bowl and gently deflate with your hands, on a lightly floured surface split or cut the dough into 6 evenly sized dough balls. Let it rest another 15 minutes.
  4. Heat pan to medium and then stretch the dough to size and press firmly with your fingertips to form dimples. Cut aluminum foil to the size of your pan and spread a little olive oil along the top of it. Shape and place your pita on the foil. Put 2-3 tbsp of water in your pan (it should begin to steam immediately) put your aluminum foil with the pita on it into the pan and cover with a lid.
  5. Let it steam for 12-15 minutes, flip the pita over back on to the foil and cook uncovered another 2-3 minutes.
