Ingredients

  • 1 1/2 cup fresh or frozen berries
  • 2 medium ripe bananas, sliced into 1/2-inch pieces
  • 1/4 cup honey
  • 1 cup uncooked quick oats
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 cup fat free milk
  • 1 large egg
  • 1 tsp. vanilla extract
  • No-calorie cooking spray

Directions

  1. Preheat the oven to 375 degrees. Lightly spray 8 x 8-inch or 9 x 9-inch ceramic baking dish with no-calorie cooking spray; set aside.
  2. Layer bottom of dish with banana slices. Sprinkle with half the berries, 1/4 tsp. cinnamon, 1 tbsp. honey and cover with foil.
  3. Bake 15 minutes, until the bananas get soft.
  4. Meanwhile, in a medium bowl, combine the oats, baking powder, and remaining cinnamon.
  5. In a separate bowl, whisk together milk, egg, vanilla extract and remaining honey.
  6. Remove dish from oven. Pour oat mixture over cooked bananas and berries.
  7. Pour milk mixture over oats, making sure to distribute mixture as evenly as possible. Sprinkle remaining berries over top.
  8. Bake oatmeal for about 30-minutes, or until top is golden brown and oatmeal set. Serve warm from the oven or chill for later.
