Ingredients

  • 1/2 lb. whole beets
  • 1 – 15 oz. can cooked garbanzo beans
  • 1 lemon
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. tahini
  • 1 tsp. olive oil
  • 1-2 cloves garlic, minced
  • 1/2 tsp. salt

Directions

  1. Preheat oven to 375° F. Wash beets, coat lightly with olive oil and wrap in aluminum foil. Place on a baking sheet, and roast in the oven until cooked through, approximately 45 to 60 minutes. (Beets can also be boiled for 45-60 minutes or until soft)
  2. Remove from oven, let cool 10 minutes, remove skin.
  3. Puree beets and remaining ingredients into food processor or blender until smooth.
  4.  Serve with pita chips, carrots and cucumbers or your veggies of choice.
