Ingredients

  • 1 carrot, shredded or finely chopped
  • 1 zucchini, shredded or finely chopped
  • 1 bell pepper, shredded or finely chopped
  • 3 green onions, chopped
  • 1 large garlic clove, minced
  • Handful fresh cilantro, chopped
  • 1/2 cup flour
  • 1/3 cup water
  • Vegetable oil for pan frying fritters
  • Salt and pepper to taste

Directions

  1. Heat 1 tbsp oil in a pan, add shredded vegetables, onions and garlic, season with salt and pepper. Cook for 5 minutes until softened.
  2. Remove from heat, fold in chopped cilantro.
  3. In a large bowl, mix together flour and water to create a pancake batter like mixture. Fold in the cooked veggies.
  4. Heat pan with shallow pool of oil for frying.
  5. Once oil is hot, form patties by adding 2 tbsp. of mix to pan. Flatten and cook for 3 minutes per side until golden brown and cooked through.
  6. Cook multiple patties at once but be careful not to overcrowd the pan.
