Idaho Tacos

Ingredients

  • 2 tsp vegetable oil
  • 1 lb ground beef
  • 1 packet of taco seasoning
  • 4 large russet potatoes
  • 1 can of refried or black beans
  • 2 cups of cheddar cheese
  • 1 cup green onion, chopped

Optional: salsa, butter, sour cream, cilantro, jalapenos, onions, tortilla chips, etc.

Directions

  1. Heat up a sauté pan with oil on medium heat until hot and then add the ground beef. Cook and break up the meat to a crumbly texture, then add taco seasonings and mix well.
  2. Wash, dry, and poke each potato with a fork a handful of times then microwave 1 potato at a time for 5-10 minutes or until it’s soft enough to pierce through the center with a fork.
  3. Cut a line down the potato and then push each end toward each other to open the potato. top the potato with beans, the fully browned ground beef, cheddar cheese and chopped green onions.
