Cottage Pie

A simple version of the traditional Irish Shepherd’s pie. Hearty ground beef, mixed with veggies in a rich gravy then topped with velvety smooth mashed potatoes and baked to golden perfection!
Cooking Tip

You can top the potatoes with any herbs or spices you enjoy, a dash of red pepper flakes may give you the kick needed to amplify this dish! Add any veggies you may have to the meat, frozen peas work great in this recipe.

Ingredients

  • 1 tsp vegetable oil
  • 1 lb ground meat (beef, turkey, chicken, even lentils will work)
  • 1 medium onion, small diced
  • 1-3 cloves of garlic, minced
  • 1 carrot, small diced
  • 1 can of corn, drained
  • 1-2 tbsp. Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 tsp dried parsley
  • 2 2/3 cups instant mashed potato flakes
  • 4 tbsp butter
  • 1 1/3 cups milk
  • 2 2/3 cups water
  • 2 tsp salt, divided
  • 1 tsp ground black pepper

Directions

  1. Heat up an oven safe sauté pan with vegetable oil on medium and toss in your diced onions and carrots. Cook while stirring occasionally for about 5 minutes, and then add minced garlic before cooking another minute or two.
  2. Add the ground meat of your choosing to the now partially cooked vegetables, increase the heat to medium high and season with pepper and half of your salt. Stir the beef while crumbling it up until fully browned, then mix in the rosemary, thyme, and parsley.
  3. Turn the heat down to low and pour in the Worcestershire sauce, canned corn, and tomato paste while mixing well.
  4. In a large microwave safe bowl, prepare your instant potatoes by heating up the water with butter in it for 2 minutes or until the butter is melted. Pour in the milk and salt then add the potato flakes and mix until combined.
  5. Spoon the mashed potatoes on top of the beef and vegetable mixture. Put the entire pan in your oven and set it to broil. Keep an eye on the pan after a minute or two as it will brown very quickly. Remove from the oven and let cool a few minutes before serving.
